Linh left a Saigon fine-dining kitchen to cook the food she grew up with — central Vietnamese, fire-led, unhurried.

Da Nang doesn't need to imitate anywhere. The food here already has an accent of its own.

I grew up in Hội An, half an hour south. My grandmother cooked over coals, and everything had smoke in it.

When I opened Nến I wanted that — a room lit low, one fire, and food that tastes like the coast it came from. People ask why the menu is short. Because the market decides it, not me.
