Bloom is a French patisserie by the Han River in Da Nang. The little cakes change with the season, each one built in thin layers and finished with a mirror glaze so clean it shines like glass. The one people come back for is the Zephyr, a small white peak that hides five layers inside, soft coconut sponge, a bright tropical fruit filling, gentle vanilla cream, a light marshmallow, and a thin chocolate base. Cut it from the top and you get every layer in one bite. Beside the cakes sits the fresh baking of the day, croissants, cinnamon rolls, and warm buttery pastries. The room is calm and bright over two floors, with tall windows that open onto the river. Take a cake and a coffee, sit by the glass, and let the afternoon slow down. Open Tuesday to Sunday, 8am to 10pm. Closed Monday.

The Signature

The Zephyr. A little snow mountain you cut from top to bottom.

Five layers hidden under a smooth white peak. Soft coconut sponge, a bright tropical fruit filling, gentle vanilla cream, a light marshmallow, and a thin chocolate base. Cut it from the top and you get every layer in one bite. This is the cake people come back for.
