Nén is the most awarded restaurant in Da Nang, and it holds a MICHELIN Green Star, the honour given to kitchens that lead the way on local, sustainable food. There is one tasting menu, and the team builds it around the seasons. Nearly all of it, about 99 out of every 100 ingredients, comes from Vietnamese farms and Vietnamese seas. You sit in a calm, dark dining room, and the dishes arrive one by one, each one a small picture of where it came from. This is fine dining that tastes like Vietnam, not like somewhere else. Booking ahead is the only way in.
